When I was a young line cook working for Jean Georges we used 100’s of avocado fans a day. As the youngest and least experienced cook in the kitchen guess who ended up making most of them. The reason why they gave the task to me was because it is so simple they figured I couldn’t mess it up. I want to share with you how to make a PERFECT looking avocado fan.
First off you want to gently grip the avocado and feel how soft it is. You want it to give but not be mushy. If its too soft it wont hold its shape but will be great for guacamole. You don’t want it to be hard like an apple. Using a sharp knife cut into the top of the avocado until you feel the pit. Spin the knife around to make a circle, then twist the avocado to separate the two halves. Cut the avocado in 1/4s from flesh side.
Peel the skin starting from the pointy end. Gently scrape the surface with a plastic spoon to rid of any brown on the top layer of the avocado. Lay the Avocado down so that there is a 90 degree angle on the left side and slice the avocado 3/4 of the way up in even slices about 1/4″ thick. Then gently fan out the slice. Use right away or cover with a moist paper towel and put in the fridge. When ready lightly season with salt and olive oil.
